¼ cabbage (green or red or both) sliced finely
1 carrot, grated
¼ punnet snow pea sprouts
¼ punnet sunflower sprouts
Handful of snow peas, sliced finely on an angle
½ punnet enoki mushrooms
1 handful of raw cashew nuts
1/2 to 1 avocado
1 kaffir lime leaf, diced finely
½ red capsicum, sliced finely
¼ bunch basil, tear leaves
¼ bunch chives
Pinch Himalayan Sea Salt
Cracked pepper (to taste)
2 dessertspoons white balsamic vinegar or vinegar of your choice
4 dessertspoons lemon Olive Oil
Add the sliced ingredients to a medium sized bowl and mix through with your hands.
Add dressing and seasoning.
Keep some of the herbs to sprinkle over the top of the salad as a garnish.
